Mango Lassi

 

This recipe is so easy and out of this world delicious you won't believe you haven't been making it every week of your life. Lassi is a yogurt based classical Indian drink that should be called Nectar of the Gods and Goddesses. At least this quick and simple mango recipe takes the title.

These days there are so many variations of yogurt available that you can make a dairy or plant-based version. Probiotic goodness all the way to the celestial realms.  Om Shanti.

Ingredients:

16 oz. plain whole milk yogurt (or plant based yogurt of your choice)
4 oz dried mango (Trader Joes dried mango has sugar so the recipe doesn't require more)
4 ice cubes
Optional: cardamom or fresh mint

Recipe:

Chop dried mango into moderate sized pieces. Place all ingredients in a blender. Blend on high speed until smooth and creamy and all of the ice and mango pieces are integrated into the yogurt. Your drink will turn a beautiful pale orange color. If you prefer a thinner lassi you can add more ice to the blender. Top with a sprinkle of ground cardamom or a sprig of fresh mint.  

This recipe calls for dried mango which is sugared. You can also use unsweetened dried mango. If you use fresh mango which will be delicious, although not always in season, you can leave out or use less ice. You may need to add a little honey or sweetener of your choice depending on your preference and how tart the fresh or unsweetened dried mango is.
